In July 2003,
Aurora Bistro opened its doors at 2420 Main Street in Vancouver, British
Columbia. The menu, inspired by a West Coast return to basics, features
modern Canadian cuisine in an approachable neighbourhood setting. We rely
on elemental tastes and textures; allowing the ingredients to speak for
themselves rather than masking them with complicated sauces or combining
too many flavours. Closely cultivated relationships with local organic
farmers, fish purveyors and mushroom foragers allow Chef Jeff Van Geest
to offer authentic flavour, incorporating the freshest West Coast ingredients
into every dish.
Aurora’s wine list is comprised
fully of BC wines, the ideal accompaniment to local cuisine. The list
celebrates BC’s vast array of vineyards, from the biggest and best
to carefully sought-out boutique wineries. Sitting on the same latitude
as France’s Loire Valley and Alsace region, British Columbia’s
wine country has truly matured over the years, and we’re proud to
source out the perfect wines to compliment our dishes. Aurora also features
locally-crafted beer and cider on tap and a clever cocktail list incorporating
organic sodas, fresh juices and new twists on old favorites.
With a dedicated passionate staff, exciting critically-acclaimed food,
and a comfortable neighbourhood setting, Aurora Bistro enjoys showcasing
the best our region has to offer.
